if you want cheese to incorporate well into your grits, divide it up and add it every few minutes to the cooking grits, not all at once at the end. If it gets too thick, thin it out with butter.

If you want to get technical, you botched the egg preparation a little bit.
First: An over easy egg shouldn't have any browning, in the movie they are pure white as well.
Second: the egg in the movie wasn't actually over easy, but hybrid of an over-easy and a sunny side up. The egg was covered while cooking and never flipped, you can tell because the yellow of the yolk is visible through the cooked white.
