I have been a vegetarian for almost 10 years and I love this recipe! I halved the recipe and it made about 7 cups, which is plenty! I also added lima beans in mine.
I made this chili twice during my thirty day vegan diet. I used a combination of Beyond Meat and Gardein Crumbles. It makes quite a lot so make sure you have a big pot or pan. Probably the best chili I have made in a long time. Didn't know I like Kidney beans. Two housemates told me it was the best they have ever had. A longer list of recipe items than some but worth it. Watch the salt.
