    First time eating spaghetti squash this evening. I cooked it in the pressure cooker, whole, pierced the squash several times to reduce pressure when it cooked. 15min… and it cooked perfectly…. Cut it open.. scooped out the seeds and then twirled for the besgetti!! 😉 From there, made it similar to the way you had it… but I added capers…some chopped snow peas… added some meatless Italian meatballs… sauteed it all together for a few minutes…… with a side of salad. It was WONDERMUS! I've eliminated all dairy, eggs, fish and all but chicken from my diet… so I'm enjoying new things on this journey. Oh, and I used Avocado Oil instead of Olive Oil. Thanks for the great recipe!

    I'm older and have arthritis in my hands, making it impossible to cut a spaghetti squash. Thankfully, the boys in the produce department at my supermarket are so sweet to cut the squash before I take it to the checkout. God bless them.
