How do you serve these if someone doesn't want a whole hen? Do you cut it in half at the table? Spoon the stuffing out first? I don't want to ruin a glamorous presentation by awkward moments. I am so making these for Christmas but had a hard time finding them. $5 each too.

Mary I’m making this soon, yummy. Mary a quick question, I have always stored my eggs in the fridge, I’ve been informed recently that they can stay out on the kitchen counter, is this safe? Thanks for all your recipes and advice. Greetings from Ireland 🇮🇪❤️🎄🧑‍🎄🎅

I remember preparing these for the first meal I served my in-laws. 😃
They were gorgeous to say the least! 🍗
Since that was my very first time, I was very pleased at how stunning they looked, & how VERY delicious they turned out.
This dish is absolutely perfect for Christmas eve, or, Christmas 🎄 dinner.
Most people I served these to, said they felt as if they were enjoying a meal in a 'fancy' restaurant!
I remember I served these with wild rice, asparagus, & sweet potato 🥔 soufflé.
About a year later (1979 – 1980) I then learned about the 'perfect' 👌 raspberry jelly!
I definitely second your exact thoughts on how very delicious, & beautiful it is.
I believe it's the only time when I would never substitute any type jelly.
I would definitely recommend that the table, area, etc. is set in a very pretty way.
I've never met anyone who isn't VERY happily surprised by this meal.
Oh, remember, Cornish hens are so delicious. 😋
I recall how that meal was very expensive for us newlyweds in 1979.
I'm pretty sure they were right at $2 each.
However, I'd definitely do it all over again, but, this time, I'll put those birds back in the oven for the raspberry jelly to really beautify them far more than not using the broiler for one minute. 👍🏻
However, my in-laws both gave me that special look of 'approval'. Their plates had absolutely 💯 been cleaned, leaving only two to three grains of rice! 😃
I would definitely had taken a couple of pictures, had I remembered. 📸
Thank you so much, Mary, for reminding us of this beautiful meal. ♥️

Wow! I made this recipe for dinner this evening. I was so intrigued by it that I went to the store and bought the ingredients to make it today! My husband loved it! He doesn't normally care for rice, but he loved the wild rice stuffed in the bird…and I must say, it was one of the best meals I've eaten in as long as I can remember. Thank you so much for all of the wonderful recipes that you share.

You don't see rock cornish hens like you used to. Thank you for this. My parents used to make Cornish hens when I was little. I wanted to make some for my family, but they're more expensive than chicken for me. This looks like a great dish though. I may have to splurge. 💚🌞

Cornish hens make me think of my Mom❤️ she used to makes them with peas and pearl onions. I can still smell the awesome aroma when I got off the bus as a kid. My mouth would be watering before I got to the door 😂 you remind me of her sweet soft spoken nature❤️ love your videos so much! Thank you!😘❤️

OMG!! My mouth was watering. I haven’t had these in such a long time. I used to make them for my dad when I was a teenager with a cherry sauce. Sometimes with a bacon/apricot sauce. He loved them!! I’m going to try them again this time for my son-in-law.

Just had another thought for Christmas about serving this with some mulled wine and that would be so nutritionist dense everyone would be satisfied. Mary any thoughts on which spices would combine nice with the cornish hens ?
