    Hey Kent…thanks for this. Barbacoa seems to be like Ranch Salad Dressing. Everyone calls it "Ranch" like it's all just one kind…but the grocery store aisle is full of hundreds of kinds. Barbacoa seems to be the same way….haven't had any two that tasted alike.

    I enjoyed that Kent. My favorite pepper is the Poblano. One time I was preparing them for a pot of chili but I used the dried kind. I toasted them, removed the seeds, boiled some water and steamed them. Then I pureed them. Man that was the chili I ever made.
