    great video with the velveting etc…. personally i think the beef was simmering to long and you probably ended up with "well done" steak. I just stirfry the beef first for only a minute, toss it out on a plate to let it "rest". I blanche the brocolli 3 minutes, then stirfry with oystersauce and when the brocolli and sauce is well mixed i turn off the heat and mix the beef with the brocolli and sauce.

    I really don't like overcooked beef, because it is to chewy. That is actually why i often make this dish with chicken thighs. But when i can find myself some rib eye i use that, to be more traditional. I tried to velvet etc, but when simmering to long it still ends up chewy.
    Nothing wrong with that if thats your thing of course.
