Hi! I’m Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

On weekdays, I’m an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I’m the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.

On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You’ve seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I’ve used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I’ve won over 27 Grand Championships. I’ve personally taught 200+ classes and trained 3,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, London, Kuala Lumpur, Canada, and Hawaii.

I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I’ve answered thousands via email so I decided to post my answers via video to reach a wider audience.     Harry you are a heck of a cook. When you get the chance try elk, 90% of the time it is the least "gamiest" of game meat IMO…..though I actually like a little bark. I always tell people…..if you want beef, then cook beef?

    Harry, have to say your ribs turned out better than mine. Mine came out with the texture and taste of jerky. Youngest was surprised I didn’t intend to cook jerky since she had enough to last her three days. Glad you had the chance to cook the moose. Can’t wait until our paths cross again. -Larry

    So my wife brought home an instant pot I immediately thought hey that's cheating my second thought was well I guess my pellet grill is cheating too but then came the Mississippi pot roast in the instant pot was blown away best meal I had in a long time the instant pot is a wonderful tool and to see the great Harry Soo using one well now I can officially love the instant pot thanks Harry want to try that hot and fast brisket cook on the wsm before the weather turns

    I've never had moose. That looked really good. It is important to note that, in my experience, most wild game falls pretty close to beef, pork, or chicken in basic flavor profile. My best advice when trying game meat for the first time is to use your favorite recipe for these meats and not get too adventurous with an exotic recipe to "disguise the wild taste". This "wild" or "gamey" taste is usually produced by the animal having an extreme diet (mostly evergreen browse, for example), poor butchering practices, or both. That is primarily why I process my own venison, and people who swear they hate deer will also swear that I'm feeding them beef and telling them otherwise.

    Harry, you have inspired me to create a dish using that combination of yogurt and Korean BBQ sauce. I have both available and am going to give it a try. Though I will use something other than moose, any recommendations beside beef and beef ribs?

    Now that's definitely something special—looks fantastic both ways. I'd always figured it had to be something like a cross between bison and venison, and sure enough it looks the part here.
