Her recipe is lovely – I’ve made it. However, her meat is not browned properly at all. It really needs a dark brown crust before you braise it in the liquid.
The cognac is a lovely addition.

I made mine with a stout beer and I swear to god it’ll blow your mind. WAY better than the wine in my personal opinion.
I like how simple it comes together, but I guess it forgoes techniques? The texture of the beef isn’t going to be the same

Salt will help to draw out the liquid of meat plus fresh vegetables.

Spend the time making beef broth… it’s worth it if you can source the bones and such for a good price 😉
I need this for my boyfriend delete difference was I sautéed my aromatics and butter before adding them as well so I did time and sage in the brown butter and it was one of his favorite dishes. Highly recommended
