This chipotle barbacoa recipe is one of my favorite Mexican dishes. It tastes great wrapped up in a burrito, served in tacos, or used as a topping for steak nachos.

    Barbacoa can be made a 1000 different ways. I learned my very plain version from a Mexican restaurant in Zillah, Wa. Place a 3lb chuck roast in a frying pan and brown on all side. Place in pressure cooker, sprinkle 1 pkg of aus ju over meat And set a cube of butter on top. Cook for 90 minutes. When done, break up the meat and pour juice over. Serve with flour tortillas, salsa of your choice, cheese, onions, etc.
    I like mine plain!

And, P.S. to the rude Debbie downers comments, easy to post negative comments, since some of you guys talk crap I request you put up your own video to prove your recipe to be supposedly authentic. Barbacoa can be done in many variations. I've traveled to many cities of Mexico and different cities have different ways of doing things, the beauty is the variations. Authentic is what ones personal taste perceives it to be. Chef I appreciate your video, again thanks for sharing.

    Because a white guy makes it! Lol! This is so inauthentic it could only come from California home of the inventor of the Chimmjchanga!
    But seriously folks stop with the reverse racism and learn some authentic Mexican culture and remember barbacoa was made in the carabian as well as Mexico. But never like this chef. Although it incorporates some nice ingredients and no doubt tastes delicious the lack of authenticity has. I thing to do with the fact that he is white. Personally I like my Barbacoa traditional and I like it greasy! With onions and cilantro. It’s all a matter of taste. That said it is absolutely rediculous to use cheddar cheese on Barbacoa… And yes I do make it at home on Sundays a bit like my grandmother did on Sundays 😊

    Authentic or not, this recipe was easy and had excellent flavor. Mine wasn't very spicy, though. I also used pork sirloin instead of beef, and it still cooked up great & shredded easily. I used it for inauthentic tacos, inauthentic enchiladas, and inauthentic machaca, and they were all amazing!

    Good recipe but what is the true essential to Texas barbacoa is beef cheek…in Mexico they use lamb or goat but the traditional texmex is always beef cheek, it's such an amazing piece of meet and truly can't be substituted if you want to make amazing barbacoa.
