    Thank you for all the ideas for stretching food. I have already been cutting back on the amount of meat I add to certain recipes and I really don't notice the difference. Like you said,spices and salt and pepper really help alot!

    Omg do you by chance have the recipe for your creamy chicken salsa dip? I’m just wondering how much cream cheese depending on how much beans, corns and chicken …. I was thinking of even using canned chicken. Yum!

    You don't have to have eggs to make pasta look online for the recipe. I don't use hamburger in my spaghetti I put half a bag of pepperoni it's cheaper than ground beef. I did find out that you can plant your dried beans as long as they aren't really old. Start them on a damp paper towel to make sure they germinate. It seems like the red beans germinate easier.

    I have a small school notebook where I write down my recipes. However, I also sat down several months ago and made a list of items I could live without. For example, I had never tasted yogurt until I went away to school and I grew up fine without it. Check. I had never seen an artichoke heart until I moved to L.A. I had never bought an avocado until I was in my forties. Don't need them. Check. I'm a senior citizen so I have no business eating bread. Check. Everyone has their own situation but this is something that we can all do.

    I try a recipe then if I like it I print it and put in my recipe box. It has ones in there from my mom and grandmas too! My mom's Catholic Daughters of Minnesota cookbook has everything in it too, its 3" thick!

    We are well-stocked, and I'm working on patio gardening – the July/Aug heat has done a number on it, but I'll replant this weekend (we live in south FL). All the 'gurus' are predicting serious shortage issues will begin mid-late Sept. I'm already seeing signs of it. Today at Walmart, nothing but empty gum boxes at the check-out counters – every single one, every brand. Not that gum matters, but it's the tip of the iceberg that's coming. My freezers and cabinets are stuffed, and I'm taking the position of buying a pkg of chicken breast every week to avoid dwindling our supply. and buying basic produce/dairy each week, that's about it. I figure anything that is likely made in China must be very well-stocked, plan on a y ear minimum, and anything that is made here in the U.S., about 3-mo supply minimum.

    I just got home 20 minutes ago 20 minutes ago from a local discount supermarket where I just needed to get a couple odds and ends That I couldn't find at Aldi. I'm not completely oblivious to to prices so when I put something in my cart I have a general idea of how much I'm going to spend at the register.. I literally was Thinking I was going to get out of the store store for only 30 – $40 $40 so imagine my should my shock when the total was $77! That's on top of the $140 I just spent at Aldi. Thank God there's only 2 of us left at home to feed other than the cats.

    Several years ago, I wrote down all the special Thanksgiving and Christmas recipes. It is has been so nice to pull out that journal and have all those recipes at my fingertips. I hadn't thought of increasing it to all my favorite recipes. Thanks

    I started a recipe binder about a month ago and it's been great. It did take me a while to go through Pinterest and print out all my recipes but not needing to use my phone has been amazing. I keep them in a binder my son used for school last year but brought home in good condition.

    I started a “my favs cookbook” about a year ago. Everything from breads, meals and seasoning mixes. It’s just a small spiral notebook that I keep in my kitchen cabinet. Makes it super easy to grab it and double check myself. I add recipes when I try something new that I feel I could make several times a month.

    I agree 100%. This weekend we are actually giving away the bed in our guest bedroom to turn that room into a huge walk in prepper pantry. I have always been a prepper but have been stocking up fiercely for a year. Huge orders from Azure Standard plus Costco and Sam's have been constant. In fact I am picking up a $1,300.00 Azure order in a few days. Just got three extremely heavy duty metal shelving units plus have built -in floor to ceiling shelving in that room. It is going to be a weeklong project but now everything will be in one very spacious and organized room. People are starting to realize we have been right about the food shortages and are stocking up. That is good but also will make it harder for us so I grab more stuff every time I go to the store. Whether it's once a week or three times a week, I come home with more. Not just food but cleaning supplies, first aid, toiletries, pet supplies, etc. Canning like crazy, freezers filled to capacity, and making sure we have at least 12-18 month supply of everything we need. Thank goodness hunting season is coming up soon too!

    Can't believe the rice krispie story! My wee grandson had a birthday party and someone brought frosted krispie pops! Everyone was thrilled. We talked about back in the day. I used to make a pan of them and swirl peanut butter chips or choc chips over top or sometimes both. No one remembered that! What is old becomes new again!

    My three year old has been asking, for weeks, several times a day, “Where did you get this? …So they had it? So you could buy it?” She’s been trying to understand, I guess, me constantly saying things are out of that we get what we can get (I’ve got a few complainers here).

    My first thought was how sad and heartbreaking it was that this was how she was growing up. Almost immediately though, I felt convicted. How lucky and spoiled we’ve been that I could think this is so sad. So many people have spent their whole lives, even recently, but especially over all of civilization, without the convenience and volume of products and resources we’ve had.

    Hi Audrey. I just received my electric pressure canner and reading books and recipes. Im a n00b, and don’t want to kill us LOL.I’m buying gardening supplies and looking at raised beds. I also bought a small greenhouse that was marked down at Aldi’s. Speaking of Aldi, has anyone else noticed that the bigger ticket items in the “isle of shame” aren’t selling well, and often on clearance?

    We are ordering more specials from Butcher Box and ( do not like the Italian sausage links) and buying more dairy items from our local dairy. I’m also going to grow a few test veggie plants for fall, and go big in the spring.

    I would like to point out that skin care and body care is considered self care. Please don’t underestimate how these can lift your spirits and nourish your soul.

    One friend has lost 20 pounds ( he cut out chips, cookies and cut down on soda). I think I may end the friendship. Another friend has lost ten pounds. I have lost three pounds. This is the silver lining.

    Your ideas are spot on as usual Audrey. I have been working on a list of 20 meals and the ingredients needed for each one. Since it’s just the two of us, those meals and the leftovers should get us through most of the month and will also allow some flexibility in trying out new recipes. Having that off my plate is so freeing. Would you be able to do a video on how you make tortillas? Hope that you and your family have a wonderful weekend.

    My kids think I’m crazy for stocking. I’m okay with that. Spanish rice is so amazing for flavor & filler. Meat is no longer central to our meals. I want chickens, HOA is not a fan 🙁 Have you tried to buy long term eggs— insane! I have seed packets I bought for this year & didn’t use them. Will they still be good next year?

    Couldn’t agree more. We are spoiled! Eating out, convenience foods, snacking….none of this is necessary. Cooking from scratch, especially if you grow a little bit of your own food, is less expensive. We don’t need meat everyday and it can be an ingredient instead of a main dish. We also don’t need 3 meals a day. There are ways, you just have to want to do it.
