    I am a big texture person too. It turned out nice looking. I don't know if it would work but maybe if you took the lid off near the end of the cooking process or maybe just partially off it might get crispier. If all else fails there is always the blow torch method. I don't own one of those but have thought about getting one. Thank you for sharing.
