When I tried to make fried rice on my griddle, it immediately stuck as soon as it hit the griddle. I used to just use fresh cooked rice still hot from the rice cooker and it would come out great, but that was cooking on Teflon pans. Is the refrigeration and drying to help it not stick?

Subscribed yesterday to the channel and I love your content!! My father's day gift for this year is a half griddle half grill which I really like! It doesn't come with a hood/cover like a regular grill. I got myself a flat top cover to protect it from the elements. Got it seasoned and I've used it about 4 times so far. When done cooking, I clean it right away, add some oil to the griddle and when its completely cool I'll cover it.
Anything you can recommend me for dealing with the griddle that has no hood? I just keep it covered when not in use. Also, do I have to keep the surface leveled or do I slightly level it towards the drip hole? I'm new to griddle, thank you!
