Oh man, I am with you on the potatoes! So good! Also, I hated school too, so great to see an environment in which kids thrive. Keep doing the good work you're doing, it is appreciated.

Potatoes are my favorite, too – can eat them every day. I often do the same as in this vlog – top with a little "cheese" sauce, sometimes a little ketchup and that's it. Hat's off to you being a teacher and especially such a good one. It is such a hard job and as much as we talk about loving kids and supporting families, it is not reflected in the money we are willing to spend on education. And with everything else that is going on now, it must be even so much more difficult. Kudos!

I’m listening to Dr. Greger’s latest book, How Not to Age, and he talks a lot about the negative effects of salt. The funny thing is that those effects aren’t seen in using miso for saltiness. I’ve been adding miso to dishes as a salt substitute. I also use Benson’s Table Tasty, but it’s not as neutral as miso.
Not sure if you’ve listened to/read much of Dr. Greger’s content. If not, I highly recommend diving into it.

Hi Joey, you can make low calorie oats. Just cook quick oats or a mixture of oats with a lot of water. Let it cool, so it gets very thick. You can heat it at work with or without extra water or some soymilk. I use 60g oats with 340ml water/fluid. It has 200 calories, so you can add your banana and cocoa easily. Hope it helps!

Yummy 😋 food in this awesome what Joey ate in a day for lunch. Yes beans,& legumes are a good staple of a vegan wfpb diet and I love 😍 beans & legumes more than I did meat before going vegan plant based. Love 🥰 the video and love ❤ Joey.

I am an RN working in outpatient hemodialysis so I start my day at 3AM. I pack breakfast and a snack every day which is usually some oatmeal, a bowl of soup, some fruit or a salad and some pistachios. Your lentil soup looked delicious!

Hi, Joey! You punched me in the gut with your video on 8/29/2023 and based on that I’ve lost 34 lbs since then. Seeing what you’ve had for lunch causes me to ask you if you are veering away from limiting yourself to 400 calorie meals (1200 calories a day)?
