How much / how often are you driving to have enough battery power to cook like you do when with your travel partners? Do you think you’d be anywhere close to bringing in enough power with only the 400W of solar?

I have a single burner induction stove like the one that you mentioned. I have a small travel trailer so I will make use of it next summer on my camping trips. This will allow me to minimize my use of propane which can be a bit inconvenient to refill at times. I typically stay at serviced campsites and it's handy to be able to take this little stove outside and make use of my 110 v exterior outlet. My wife is not a coffee drinker, but I need a hot cup of coffee to start my day. I have a 1 litre kettle that I use with my cone style filter that sits on a mug. It is really convenient and the coffee tastes great. I used to have a pop up camper that had a secondary small dinette for two with a little table. I purchased a small microwave from Walmart that fit perfectly on the table and it was extremely handy. Thank you for the video.
