Have you thought about making "armadillo eggs"? In case you haven't heard of them they are jalapeno poppers wrapped in sausage or hamburger meat then wrapped in bacon and cooked low and slow usually on the grill/smoker. Of course, everyone seasons their meats with their preferred seasoning.

This is the best so far! Scotch eggs and beef wellington have been on my wish list for the longest time. I don't deep fry so you've given me the ultimate recipe. Thank you!

Those look great! I've made them several years ago- I used my ninja foodi pressure cooker to soft boil the eggs, then switched over to airfryer mode once I had them wrapped in the ground sausage and breaded..good times!

Length wise ? Does it matter if your egg runs North and South versus East and West ? That egg looks great and the sausage looks moist too ! Pro tip using only the tip of the insta read! Top Video !

That's now my favorite recipe that I have seen you make!! I love Scotch eggs with the jammy yolks but never made them because I thought you had to use a deep fryer. Now I can use my Air Fryer! Thanks CJ, can't wait to make them, Melaney from SoCal
