    My mom would always salt the bitter melon first, sometimes even putting it in a salt bath. Then squeeze it dry then pat it with table napkins just so she can get rid of the bitter taste. She knows us kids don't like how bitter it is.

    I'm confused. why are all the comments here expecting this dish to be vegetarian/vegan friendly when she she never said it is. She clearly said vegetable dish, meaning, a dish that mostly compose or the main ingredients are vegetables.

    just because its a vegetable dish does not mean it'svegan friendly.

    and secondly, please have some respect of other people's culture. it really does not cost you anything yo be respectful and kind.

    My dad's pinakbet doesn't use broth or water. Straight up dump everything including meat of choice, add salt or patis. Let it simmer with the lid on and stir every once in a while until fully cooked.

    what's the deal with vegetarian dishes being considered unflavorful anyway? idk why there's this need to specify that a vegetarian dish "actually tastes good" unless youre eating boiled potatos with no salt, there are plenty of vegetarian dishes that taste grsat.
