the store-bought yogurt in the recipe acts as a bacteria culture starter, a lot like sourdough starter. you need the cultures from existing yogurt to easily create more. thats why you need to keep the milk mixture in a warm environment. you are fermenting and feeding the bacteria cultures the same way you would allow bread to proof before baking. once its proofed, you have more fully emulsified yogurt.
from the yogurt that you make in this recipe, you can continue to make more replacing the store-bought 4tbsps with your homemade one. therefore, you dont need to buy more from the store, you have a starter culture already.
i love ms shi’s videos and people misinterpreting her responses to comments was so frustrating to see when she explains very well how the process works. its not clickbait, its just bacteria 🙂
