– 15 g bonito flakes katsuobushi
– 10 g dried kelp(s) kombu
– 20 g fresh ginger
– 2 cloves garlic
– 50 g green onion(s) green part

– ½ tbsp lard
– 50 g chicken skin
– 100 ml water
– 50 ml soy sauce
– 1 tbsp mirin
– 1 tbsp sake
– ½ tsp sugar
– 1 pinch salt
