Re-veni, re-vidi, re-vici⦠I made this soup again, this time a double recipe, for a larger crowd. That is a lot of soup. This gave me an occasion to appreciate it to a deeper level, beyond the exciting discovery stage. As mentioned earlier, this soup somehow stays with us and lingers in our brain. I recently came upon a Korean word which may describe the situation: Siwonhan-mat. The third taste of Korean food. ´ Siwonhan-mat is a refreshing and pleasurable taste experienced through the body rather than by a sense of smell or taste.´ A unique and pleasurable sensation which lingers and is experienced during the digestive process. Of course I am only a beginner but I thought this was interesting. Consciousness, awareness and appreciation.
Love that you added roasted veggies for extra texture and flavour. Itβs pretty cold in Melbourne Australia at the moment and this warming soup will be made this week.
I just made the soup and it is, indeed delicious and the instructions are so easy to follow. I particularly liked the idea of dicing the veggies (onion, carrot, celery) into very small pieces. It took a little longer but it was totally worth it. The pesto was the final bit of brilliance. Very well done, Sir! Next time, I might roast additional sausage because I wasn't able to follow the advice to refrain from nibbling too much once the veggies/sausage were done. I have no willpower!

3 cups of water converted is 700 ml water. Seems a bit much to me. I blended the almonds with 400 ml water. You think itβs ok? ππ½ ohh and even now itβs still has a watery consistency. But nice.
Oh Wil- donβt want to be barer of bad news but i made soup- while tasty had really bad stomach pains all night. Went on a deep dive about cashews found out they have phytates and oxalic acid. ;(,

Rather than cutting mushrooms, I tear them up by hand. I find the torn mushrooms have a meatier mouthfeel. They tear into defined strips.

That looks amazing! Costco brand Kirkland pesto is pretty good (best I've found) if you don't have homemade on hand.
