Hi Sam, I love your energy and enthusiasm. I'm slightly obsessed these days when it comes to recipes, ingredients, having from scratch recipes & a quick recipe for the same thing, dehydrating, cooking in bulk storing it using my foodsaver, prepping meals one day a week, baking anything, professional cake decorating, trying new ingredients and looking at what food I can grow including fruit trees. I mention this because it's ironic sense I have aspergers and one of my food traits is about the texture of food and not liking ingredients mixed up. For example I wouldn't eat a stir-fry but I would eat most of the ingredients separately. I don't really like cooked vegetables but digesting them raw is painful. This leads me to say that I've had crohns disease since I was a little girl and over the years I've had all but one metre of my intestine removed causing short gut syndrome and twelve years ago at age 32 I was put on TPN which is basically being fed through a major vein. Every line should last for 5 to 10 years but within 6 months I had 5 lines as my body rejected them and I ended up with extensive permanent blood clots. I could no longer eat this way and my lifelong specialists gave me two years at the most to live which was realistic considering my extensive health history which includes many more diseases than I've described including potentionally fatal bleeds. Anyway it's kind of ironic how much time I spend thinking about food etc. I love your channel and I'm going to try your tofu recipe. Thank you for all the hard work you put into your channel. Xx
I'm not vegan, but I do like to substitute a few of my meals with vegan/vegetarian options. Just made this tonight and this is by far the best vegan mac and cheese I've ever tasted! Definitely awesome!

Im not Vegan, but I cook a lot for my own Ketogenic diet. If you dont want to use flour, you can use any plant based starch as a replacement. Starch is what thickens your food when brought to heat.
I love watching your videos! I have your vegan cookbook! Now why would you put sugar in Mac and cheese powder?? I don’t want my cheese powder to taste like dessert!
My Indian self didn't have lemon pepper, so I substituted with some gooseberry powder (aka. amla powder). Tasted like fancy mac and cheese. Was a little too heating for me, so I think I'll reduce the onion and garlic pepper next time. But all in all, a nice recipe and gave me some ideas. Thanks!
OMG, this is the best Vegan Mac n cheese! I added nutmeg (because I love it) and butter to the milk. Can also add "bacon" or truffle oil 😍. Thank you, I will be fatter throughout the holidays.

I always put lemon pepper (or lemon juice/salt/pepper) in my vegan cheesy recipes and that is definitely the secret. Subscribed.
