Joshua definitely acts like he knows more than he really does, he also uses expensive ingredients to cover up for that, I watch his videos occasionally and understand why people like him, he certainly is not a bad chef by any means. He just rubs me the wrong way. Pun intended
My biggest issue with his recipe is actually the temp. Personally, i believe a perfectly cooked rib isn't fall off the bone, but holds on just enough to the rib until you take a bite but comes off clean.

I always remove the membrane. My thinking is that salt and smoke can’t penetrate the membrane as easily, but maybe that’s something to experiment with.
Gotta say 1st ide just smoke mine. How ever his method is a close play on what many restaurants do. Neither of you guys are admitting that fact. Restaurants do bake, refrigerate, then grill just saying, hence the fall apart tenderness. Your a smart guy, Josh is a smart guy but this is food for thought…Maybe include in your review. Like I said ide just smoke mine though just preference.
Good work. I have noticed that Weissman's clip received 1.3M views and the ribs look sad. The only area that I give him the benefit of the doubt, is that not every oven has a top broiler. Too many people must have been misguided by that clip. I had done much better job decades ago using oven and grill combination when I did not own smokers. Gordon Ramsey's sticky ribs may be worth experimenting with. However I can't bring myself to do that, since I know I will prefer my ribs properly smoked instead.

Doesn’t this guy see the folly in these types of “comparison” videos? He’s obviously a pit master, clearly knows BBQ, but pointing out how every other popular YouTube cook is “wrong” according to him is telling these viewers they’re opinions of these chefs is also flawed. It’s just kinda crappy. And a cheap way to draw attention to your own channel for reasons other than your own innovation. You’re probably better than this. Probably capable of better. Why not try that instead of calling out the faults and flaws in all of these other people who’ve worked hard to get where they are? The armed forces would call it “stolen valor”.
Josh made pulled pork and you made ribs. The funniest part about Josh's video is he goes outside in WINDY environment to sear his ribs when he has a broiler inside a comfy home. 🤣
