I love hot dogs, too! And, while I like kitchen gadgets, I would not want or need a sausage casing machine. In the past, I have used my Cuisinart food processor to make a meat puree, mixed in salt, fennel seeds, garlic powder, etc, then arranged a rope of the meat mixture on a length of cling wrap, roll that closed, and twist the ends closed. I store mostly in the freezer, but the fridge is good, too. I used the italian style pork sausage in many recipes. Whatever length selected can be browned for a recipe, quite easily, and I just consider it a βskinless sausageβ. Thanks for discussing the recipe ingredients for hot dogs! π€β€

My daughter & I make sausage once every 3 months, or so. It's definitely a time consuming thing, but oh so worth it.
We make 20-35 pounds at a time; Smoked sausage links, JalapeΓ±o Cheddar links, & Breakfast bulk.
We just made it on Thanksgiving, but next time I want to add on a small batch of JalapeΓ±o- Cranberry Chicken Sausage. Why not?
We do ours entirely with the metal Kitchen Aid attachment (grind & stuff), emulsifying by hand. πͺ
Tip from experience- I've never used anything but salted Hog casings… but I did learn to NEVER freeze the natural casings. They were terrible to work with- constant blow outs , to the point we stopped mid- stuffing, covered in meat, & drove an hour to get a new pack of non-frozen casings. lol

Of all the things listed that are needed I have the spices and a scale. I can buy the meat. Thatβs it. Iβm the only person eating the hot dogs so Iβll have to keep buying the better quality ones at the store. I do really like this , though!

I know that I can make the sausage meat into patties. I'm thinking about doing this for the π meat too. I am widowed dog-mom. We don't need 4 or even 2 # of meat as we prep alot. If we both love it, then I will get the Kitchen Aid add ons.
