⬇️Ingredients for the crust:
Digestive biscuits or graham crackers 190g
Melted butter 60g
⬇️Ingredients for cheesecake filling:
Cream cheese at room temperature 450g
Sugar 160g
Corn starch 2 tbsp
Lemon juice 1 ½ tbsp
Vanilla Extract 1 tsp
Eggs 2
Greek yogurt 80g
Heavy cream 125ml
Strawberry puree 80g
Red food color- a few drops(optional)
⬇️Directions:
1. In a bowl, combine biscuit crumbs and melted butter. Press the crumble into 24 cm greased cake pan and bake it in a preheated oven for 10-11 minutes at 180C/ 350F. Allow it to cool down completely. Then wrap the bottom of the springform pan with aluminum foil.
2. Add cream cheese to a bowl and beat until it is smooth.
3. Add sugar and beat for about 2 minutes on a medium high speed.
4. Now add corn starch, lemon juice and vanilla extract. Mix until just combined.
5.Crack eggs into the same bowl one at a time and mix until just incorporated.
6. Lastly, mix in strawberry puree, greek yogurt, heavy cream, and food color. Avoid over mixing the filling because doing so could result in a cracked cheesecake.
7. Pour the filling onto the baked crust.
8. Place the springform pan on the middle rack of the oven. Beneath it, place a baking tray and pour some hot boiling water into it. You will be needing 1 inch of hot water in the tray.
9. Bake it in a water bath for 1 hour. For the first 30 minutes, bake it at 175C/345F and then reduce the temperature to 150C/300F and bake it for another 30 minutes.
10. After 1 hour, turn off the oven, open the door and leave it in there until it has cooled down.
11. Once it has reached room temperature, cover with plastic wrap and chill overnight.
12. Decorate with fresh strawberries and enjoy this summery dessert!
