Love the timely video. I was so excited to see hams $3 / lb, I bought 2 and sliced one and freeze dried it this week. So glad to see how well it rehydrated for you. Sadly it wasn't that long ago I could find ham $.79 to $.99 / lb. But it's definitely better than $8.99/ lb from the deli.
I noticed that there was some fat on the ham. Is there any concern about the oils in the fat not preserving or possibly becoming rancid?
Love seeing a 4.5 yr old food rehydration. Give me faith that all my hard work is not wasted. Every time you post a video, it give me inspiration to keep going. My first born (only born) came by to visit today and raided our food storage supply. She really likes our biscuits and gravy, and our cheesy chicken rice. Always says it tastes like we just made it.

Could you actually submerge most meats when dehydrating and just drain excess water?
