I've had my I-Pot for about a year, have 30+ years pc experience, though on the stove. Convenience here is hard to beat–and you are fortunate to have that very heavy s.s. pot. Don't hesitate to use your pot on the stove if you need it. For us vegans, it's a godsend. If, after pressure cooking your beans, the liquid is too thin, just mash a few beans against the side, remove the rest with a slotted spoon or strainer. Then, use saute mode on high to reduce the bean broth down to where you want it. I virtually never use all those preprogrammed buttons; they're really not necessary. I use saute, I use slow cooker, and I use manual. Of course, no yogurt for us. If you find you're gonna use it beside pc'ing, I'd recommend you get the accessory glass lid so you can see inside. Also, there's a fantastic silicone fitted lid available if you want to store stuff in the icebox. When I do beans and soups and vegan loaf I usually Foodsaver the extra, so I put the pot in the icebox (after cooling outside) so minimizing freezing time. Congratulations! I owned another brand (Farberware) before this and hated the crappy nonstick inner pot. I use this every day or two and just love the pot.
Jill from Simple Daily Recipes said to leave the beans in the water after they have cooked and by the next day the water turns into a thick like gravy consistency from the bean starch.
PS….DO NOT use the cooking instructions in the Instant Pot cooking book included. The guide for beans, rice, etc. is totally horrible! At least that's my experience.

Add salt after always, if you add before cooked they sometimes don't cook and stay hard.
