I noticed you recommend the presto stove top canner pressure cooker for beginners. As I been watching the UTube‘s everyone who uses the stove top canner has a gas stove. I also have noticed that you do yours out side on a portable gas stove. I was finally able to find the Presto electric canner. So I returned the stove top one because I was afraid I would not be able to keep the heat regulated on a electric stove. Have you ever used the stove top Canner on electric stove?

Pam I watch nearly all your posts, and although I have been canning for years I have learned so much from your scientific knowledge. Is there any way you can use your testing gadget to test what processing time is required for 4oz (250ml) jars. If I process 4oz for the same as 8oz, the contents are so overcooked, I'm sure there is very little nutrition left in the food.
What is in those jars at .07 on all your video opening scenes? I see a lemon slice, onions, maybe potatoes, carrots, something green…..? I wonder every time I see it, what is in the jars, and whether you previously shared the recipe or made a canning video on it?
One thing you didn't mention, maybe it's obvious to some, is that when your 13 lb pressure is reached you will need to not leave it on a high temperature. You did say adjust but it may not be clear to newbies.Thanks for this great video!
Oh my goodness I discovered you on accident not to long ago and was like well that seems like someone I can trust than I find out about your credentials and really been getting an education in how to do this stuff right. I've always been afraid to can meat actually I have just started canning a few things here and there. But when I get brave enough in going to rely on you. Thanks for the great info:)
Ooo, I learned two super important things. I’ve only one regret. I was hoping you would show the weight rocking. Does the speed of the rocking matter? I don’t have a dial, only the weight.
This was a very fun video to watch. When I started canning, I didn't have a teacher that handed me the jar lifter. So, I picked it up to place the filled jars in the canner and was struggling. I just didn't understand why the manufacturer didn't make the jar lifter more jar shaped. Then it hit me, I was holding the wrong end. My wife and I got a good laugh out of that one.
Ouestion: I pressure canned 16 pints of pinto beans. All sealed beautifully. BUT! I didn’t can the correct time..I did 45 minutes instead of the 75 minutes. Do I break the seals, and reprocess them?
For a tender meat, does it matter if it’s raw packed vs hot packed? Do you recall how many pounds equals the 12 pints? (Of course I know it’s contingent on what size one cuts the meat but like what you did.). BTW. You’re videos got my daughter wanting to pressure can. We did hamburger already.
Love, love, love your videos and have bought the pdf book. One comment for Jim: You do a great job filming, and Pam is blessed to have you! Here's the issue. I get motion sickness easily, and the camera moving a lot sets it off. It's best to not move the camera at all when it's going to be sped up. Then I won't have to look away. Thanks so much!

Never having canned before, valuable lessons learned watching someone for the first time work thru the process. I really enjoyed the video and many of my insecurities and questions of canning were addressed. Great job, it was fun watching the both of you interact.
I canned this weekend 20lbs of hamburger. I had an oily mess after inside the pot. all jars sealed but was curious if you might know why one leaked but then sealed??
Since this is a question for newbies. I have canned but still new. I wonder what you need to do if you have bigger jars than quartz. whats the processing time then?

I've also purchased the USDA book you suggested and feel that I'm now ready to start. Do you ever can meats that have been grilled?

I was using one of the scoops like you have to can ground beef, because I had seen you use one. My daughter saw me using it and was surprised. She, too, thought it was a litter scoop. How funny!

I always get a lil syphoning..not always noticeable by liquid level in jars but always a lil grease or water discoloration
