We use sausage with sage. I cook it and whatever else and then when time for eggs, I put it all together and scramble. Assembly is egg mixture, a little bit of cheddar and salsa. Been making them for years. Just put about 60 in freezer. What can I say, my girls are laying!

I like to make a double batch of steel cut oats and add a little extra water. When the oats are cooked, I mix in brown sugar and dried cranberries or dried cherries. I put individual servings in glass storage containers and just reheat for 4-5 days. I live in an apartment so don't have an extra freezer or a garden but I still really enjoy your videos. I home can what I get at the summer farmer's market so I have pickled veggies, jam, and salsa all year.
When I make my McMom sandwiches, I make the eggs like I did when I used to work fast food. I whipped up the eggs, cooked a thin layer, folded it twice and put that square on each sandwich. I always make my eggs like that because my family likes when I just have the ingredients cooked and they can make their own sandwiches and heat up each day.
I'm glad I'm not the only one who switches decisions on the fly! Sometimes you think you can just "deal with it" only to change your mind because it annoys you enough that it wasn't quite right lol loved all the recipes and will definitely need to get myself a waffle cooker soon!
I fry my eggs in an enamelled cast iron skillet , add a little butter, wait till it’s nice and hot then crack your eggs in. They don’t stick then and fry up perfectly! Great video today, thank you for the inspiration. I’ve never eaten a breakfast burrito before but I will give it a try now, thanks to you!

Hi Becky, did you know that you can season your both your stainless and cast iron pans? It makes frying eggs so much easier! By the way, just found your channel and have been really enjoying your videos.
Kids are home for the summer, i think we will all pitch in to make these together. Great idea! Also, fried eggs… use your spatula to flip the hot grease on top of egg and it will cook the top without having to flip over.
I like to have muffins, an egg casserole (with bacon, sausage or ham and veggies), and egg mcmuffins are my go to freezer meals. I'm going to try your casserole next week.
I highly recommend cooking eggs in the cast iron. I struggle making them in the stainless and found they cook better without sticking in cast iron when it’s well seasoned.
Becky, how are you able to touch all of the hot pans and food without burning yourself? I cannot carry my cast iron skillet without a potholder. Thank you for another great video! Have fun on your girls trip.

Hey Becky if you don’t want to reheat in the microwave (sometimes reheated microwave stuff can be rubbery) try wrapping your burrito or muffin in a small sheet of tinfoil and put in your air fryer for 10 minutes at 350 or 400 depending on how your fryer cooks. The tinfoil isn’t actually necessary but it does help to keep clean up to a minimum 😁
Have you considered dividing your casseroles in half using smaller pans? That way you have less leftovers and a second casserole for next week or next month. Personally I get tired of eating the same thing for days trying to finish up a large casserole.

We use a round Oster waffle maker and it cooks evenly and is perfection. It was $20 on Amazon.

Use the cast iron to fry your eggs. They won't stick. They fry better in my opinion too.

It will cut down on the tears if you cut onions near running water
Try chewing gum when you have to chop onions. It really works!

If you wet a few paper towels and lay it on a small spot on the cutting board it really does help to stop the eyes from tearing up

When cooking eggs in Stainless Steel, chop and fry spring onions before the eggs. Something about spring onions makes the pan non-stick
I love her but she buys more than actually using her stockpile. She is way over her head TBH.

Your not bad at cooking eggs, that was a terrible pan for that job lol.
