I have been thinking about what I wrote.
Then I watched you prepare the pork bellyโฆ. Yum!
It hit me.
There was nothing added to the broth in the simmering process. No onion, garlic, carrots, parsley, cabbage leavesโฆand maybe the bones were not even roasted first. That would create a terribly bland stock. Thus, the horrible tasting comments!
What do you think. Is my judgement sound?
The Chinese markets sell the pork skin alone, too! Very inexpensive!
You have to scrape the thick fat off itโฆ.an electric knife does a handy job.
And roast 5he skin alone until crispy!

Iโm so glad you did this video bcuz I like pork belly but are new to it. So I donโt know how to best prepare it yet. And everything you did makes sense and the finished product looks great! I over salted the last one I made not knowing what to do with it.

I have always failed to get the crispness no matter how many
recipes I try, but I have never seen the tenderising method.
In Australia and Britain the crispy pork skin is called crackling,
Iโm surprised it isnโt the same in Canada.
Great recipe but please, just be aware that you are handling raw pork then immediately handling your salt containers without washing your hands first.

I love pork belly. I like the way you are keeping it simple. Some of the recipes for pork belly I've come across can get complex.
