corn meal is polenta but its better to buy polenta I work in a grocery store you can usually find it in the natural food section ๐
So for the record locatelli and fulvi are both Lazio produced pecorinos, however Fulvi certified denominazione Di origine protetta, I'm not sure if locatelli is. As for Ava's hatred of locatelli I have a hypothesis here. Locatelli probably isn't the best pecorino Romano available, but also pre-ground cheese tends to have other additives in it to prevent it from clumping and I have a feeling that she might have come across the pre-ground pecorino, and not realize that it was the additives that changed its taste or function for Pasta Production.

Oh Eva! Vincenzo was the advisor, but Harper did this with so much love to YOU! HE deserved all the praise! He isn't raised with this kind of food and so it was way more effort for him to do it, than it would have been for Vincenzo for instance.

I'm never without Italian sausage.
I buy 5 lbs at a time, vacuum pack 3-5 in a pack and freeze it. I usually use them up in 2-3 months. I found a two year old pack in the back of the freezer that tasted fresh.

The water level was too high in the double boiler (Bain Marie). Should be a low boil too.
Polenta is corn based. Corn is naturally gluten-free.
