I can’t wait to hear how your experiment turns out with Freeze Dried dill pickle chips. I just freeze dried okra pickles and they were tasty but a bit too salty with the brine that they had been soaked in previously. I probably should’ve soak them in water the previous night to rinse out some of the salt. They will make good salad croutons.
I am really encouraged by your channel. As a young mom of 3 kids age 3 and under, I am often overwhelmed with our homestead and gardens and housekeeping and prepping, etc. Side note: I have been wondering how you are both always so peppy and energetic . . . then I realized I've been watching your videos on 1.75x speed!! Lol
The way you looked at him as he talked about how to organize jars, and then you said, "You're brilliant." Genuine admiration from one person to another…love it.
Love you guys, you're living my dream, one day we will be on our own acreage, living in town has limited options. Love everything you've about, I am planting seeds and try some food storage ideas, it's Spring here in Queensland Australia, bless you all.
All of my jars are coming out with way more head space than needed. Are these foods safe to eat? I have some with meats and others with beans. I’m brand new to this and want to be safe. Thank you so much for any help 🙂

Have you ever dehydrated eggs…I cannot afford a freeze drier…..I almost had use of one that my x owns. My daughter asked to borrow it so she could have it at her house and we’d freeze dry foods but a grandkid blabbed I was doing it with her so he said he was using it and it’d have to stay at his house…😏I’ve been dehydrating a lot of veggies even what I call orange powder, sweet potatoes, carrots and squash….my husband won’t eat these veggies but I add them into casseroles, soups and my smoothies…. Can you dehydrate dates…..?……I’d like to have them in powder form to add to my smoothies as a sweetener…. Take those dehydrated cucumbers and make into powder which is really good added to sandwich spreads especially ham spread, egg salad and tuna salad…..sprinkle onto homemade potato chips also…yummm
We have a train too, with 1 private crossing and 1 public crossing about 1 mile apart and he never blows just once. You are fortunate. Love listening to all the great questions and answers.
What will you be hunting for provision? If you're going for elk, I'd be glad to contribute in part to the tag in exchange for some potential elk meat. So good!
Just so you know if you get a Harvest Right Freeze Dryer they DO NOT support there product…. We got our freeze dryer and it was damaged. We called them and sent pictures, they said send it back. Once they received it they refused to take our phone calls and are continuing to avoid us. We are now having to lawyer up.

I have really enjoyed watching my way through your YouTube channel. I've learned so much but I don't think I have heard you discuss how you handle crop rotation on your property. I'm especially curious to know how or if you rotate crops when they need infrastructure such as in the bean tunnel. Thanks!
May seem like a little off topic, but I would be interested in a list of "incognito groups" for homesteading. I personally am looking for some guinea hens but its a no no to buy sell or trade animals on face book
Josh, any tips on bermuda grass in the garden? I'm trying to expand our food production with the lasagna/no-till approach but the bermuda is more persistent than my patience right now!
FYI. Freeze dried dill pickles (or any fermented foods) are intense – almost overpowering. I have found that if I powder the pickles – I can add the powder to my base for tartar sauce, or potato salad – or make a “dill aioli. It is delish. I’ve tried freeze drying homemade sauerkraut – same thing. I haven’t had much luck with rehydration – and dried – as a snack or topping – the pucker lasts for hours 😂😂

Have y’all met Jeremy and Melissa Souza? They live somewhere near Bonners Ferry. I have no idea where that is other than looking at a map and I understand distance is measured by time and not miles just like in the Tennessee mountains.

Question: I am making kraut in a crock. I have mold at times. Is this ok? I scrap it off but it comes back.
Up here in Alaska we have had a cold, 🥶 wet summer. We only had a few days of upwards of 70 degrees.
Oh well, maybe next year.
LOVE your ginger-carrot ferment! My first attempt at fermenting and I’m hooked! The flavor reminds me of the sushi-style pickled ginger.
Wouldn't hurt to ask your local extension office agents if they know who in the area has dairy cows.

For our empty jars, we place them into a heavy box with a locking air tight lid, then store the boxes under our porch.
