Well, not sure what's going on here, as I followed the recipe to the letter (which is unusual for me) And i used a Ninja air fryer, cooked for 30 mins. The spices were definately too overpowering, I like spicy food but they didn't even taste cooked, and the coating wasn't anything like crispy. Are you sure the spice measure is table spoon and not tea spoon ?

I worked at KFC in 2 different states and they don't use buttermilk. You put the pre-cut chick into a big drum with a little water and a powdered marinade. Mostly made of egg whites, spices, sugars and salt. They spin the chicken in that drum for about 20 minutes and then store in the freezer. There is also another spice mix that goes in the flour itself. (Extra crispy gets basically the same treatment, but they do it twice while dunking the chicken into water between the times.)
