    Bon Apetit uses the IP to cut down pre-grill cooking time of St Louis cut ribs – a cheaper, tougher cut. To break down connective tissue pressure cooking has the advantage – once again like braising. However, does the meat taste better than if it were slow cooked in the oven first and then grilled? Speed is not as important as the quality of the final dish. After two days of refrigerator time and grilling on a wood fire, what is a two hours of slow cooking in the oven where baby sitting isnt required either? What is the taste and texture compared to oven rendered ribs? Compared also to baby back pork ribs oven v IP? Still looking for a reason to use an IP…

    Most of the cake is made in a bowl with a mixer. its possible to add moisture into the batter or water in the oven to get the water texture. pressure cooking not necessary. The risotto with chicken stock can be made in a pot on the stove. The soup, except for the brisket, could be made in a standard pot on the stove. When it comes to braising the brisket (which can be done in the oven), there is a time benefit for that. It is one of the few clear examples where a pressure cooker has a distinct and clear advantage. Cooking rice or oats – in a standard pot on the stove works just fine. An unopened instant pot waiting for return will remain so unless there are several good reasons to own one. So far, not yet. still looking.

    Take the first gumbo dish. Its 15 minutes to build up steam, then 10 minutes cooking then 15 minutes to release steam. thats 40 minutes. Not really a time save when you must prep the chicken stock in advance and simply simmer the ingredients. Then you must clean the always smelly silicone sealing ring with the rest of the pot and lid. This might be useful if you dont have access to a stove, but otherwise it doesnt seem all that fabulous. All pressure cooker recipes require one cup of liquid and cook under steam pressure like it or not.
