Your videos are so helpful! My problem is that i am still addicted to highly palatable foods (salt and fat), so transitioning to the low fat lifestyle is not easy for me, bit i am going slow and reducing the amount of oil and fats in my food – i am already whole foods and mostly plant based (a few exceptions still with cheese, but i want to cut that out, as i know that plantbased is the best for health). Not sure if i will ever reach the point of water sauteeing, but if i do 1 tablespoon of oil for sauteeing per day and no more isolated oils that would be a huge win for me! Have you ever heard pf the hard 75 challenge by andy frisella? I read about thos recently and i thought about you because you like challenges and you are very disciplined. Just wanted to say how gorgeous you look in thos video – you definitely need to share a make up tutorial for your look here! I wish you and yojr husband all the best for the upcoming year – lots of love from france♥️🇫🇷🤗

I made plant based scalloped potatoes and a fancy potato soup this week. But today I boiled some potatoes and onions. Added broth and a teaspoon of marmite. So delicious and simple. Just needed some easy on the stomach . Thank you for the inspiration.

Excellent video & recipes Miranda and as you stated they are great recipes for anytime and even if you aren't doing a Mary's Mini. Struggling at the moment due to a death in the family but I will get through it and my faith helps during these hard times. Love 🥰 the video and love 💕❤Miranda & Joe.

Perfect timing. I have been thinking of doing one in the New Year. Have indulged in some processed (albeit always vegan)foods over the holidays. I LOVE potatoes! 😊❤️🥔

I did bit of research as I am a diabetic and white potatoes make my BS run high, I saw that you can use sweet potatoes, my question to you is it always potatoes for you or have you changed it up with something like the sweet potatoes? This is all new to me and I started following your channel and led me to do my research on Plant Based Diets and finding it very interesting. Thanks for sharing your 40 lbs of potatoes and Happy New Years to you and your dogs and families.

Haha I was thinking of doing one after the new year to get back on track! Love the mashed potato fries! I also love making potato soup.

On a side note is there something you are doing different with filming and uploading these? This and the last one are extremely low quality and grainy and super low res. No matter what i am doing i cannot view them at more than 480p. All the other videos were in normal res – at last 720p. Not sure if you purposefully reduced file size or are recording in low res.

Great video! I love steamed/boiled potatoes, nothing better than fresh hot steamed potatoes right out of the pot! I always do that tray bake too— with zucchini, bell pepper, onion, and I add Cherry tomatoes to the top when I roast it for such an amazing punch of flavor, Yum!
Do you have any overt fats when you’re doing Mary’s minis?

Couldn't have said it better! Do you and know your body. Love it! I take your ideas and make them ours with what we have on hand and what my family likes (seasonings and veggies). Happy almost New Year's Eve!

I’ve watched several Starch Solution style YouTubers and you are quickly becoming my fave! You have a nice balanced attitude and I love the budget friendly meals. One question on the vinegar soak for the potatoes, about how much vinegar to a bag or batch of potatoes? I’m old enough to be your mom and I’ve never heard that trick before. Thanks for all you do!

Love watching you do these. I can’t do them anymore because it messes with me. Not sure if it’s blood sugar or what but I get super light headed and feel brain fog like crazy. I can do a potato, rice squash reset tho 😄

Perfect timing! I'm going to start a MM on Sunday. You are sooo right about potatoes and mushrooms. Mashed potatoes and mushroom gravy is my favorite potato meal. Mushroom gravy is the simplest thing ever! Blend 1 can of mushroom pieces (liquid included) garlic powder, onion powder, black pepper and a bit of soy sauce (optional). Heat on stove top of microwave. You can also sauteed onions and fresh mushrooms and add blended mushrooms for a chunky gravy.

I've never done one of these but I'm thinking about it after the junkier food I've been eating these past couple of weeks. I love potatoes and one of the best meals I've had was a baked potato topped with sautéed whole mushrooms, peppers and onion which leads me to believe I'd love doing a week of potato-based meals.

As usual your timing and content and suggestions are just perfect for me!!! I haven't tried a Mary's Mini yet but it's a great idea to reset tastebuds after holiday treats and kick off the new year refocused on my goals. Thank you for all the great ideas, that potato salad looks so good, I definitely am going to try that one!!!
