    Great content as always. Got 2 questions:

    1) anyone tried with tofu or mushrooms as suggested by others here? (Or Lisa, which kinds of protein do you consider great options?)

    2) I was wondering if it would be possible to add some kind of vegetable to the bake, just before you put it in the oven (fresh or frozen veggies) … Guess it would become too watery? Or maybe something sturdy like sweet potato? Would help on time and dishes 😁 … Experience anyone?

    For labels, I have Masking tape and a marker/pen handy. I write the info on the tape, tear the section I used, and done! I use it to label EVERYTHING temporary in the kitchen and to close opened boxes, bags, containers, etc. So much easier. 🙂
