I have tried very similar tricks my self. Love peanuts to. I use a pre-made satay sauce for my peanut ramen.

Re: reduced soy sauce, you can buy "thick soy sauce" at the asian market directly. It comes in a bottle, and literally says "thick soy sauce" on the label in english. I like using this for my dumplings dipping sauce because it clings better and doesn't dilute as much once I add the vinegar, or the residual dumpling broth.

The peanut hack reminds me of cheung fun (rice noodle rolls). They usually come with peanut and hoisin sauce, with some adding chili oils or the such. Quite similar I would say.
Just a question… does the dashi make a noticeable difference between the reduced soy sauce and the taste of regular kecap manis aka indonesian sweet soy sauce?
