Help! I followed the recipe exactly but when I went to spoon them out onto a cookie sheet, the mixture suddenly started expelling a lot of oil. I used natural freshly pressed peanut butter (100% peanuts) – was I supposed to use the supermarket variety with emulsifiers and other random additions? The sugar I used was half erythritol and half xylitol (making up the quantity required in the recipe). Everything else was exactly to the letter following the recipe. I ended up squeezing almost a full cup of oil out of the mixture when shaping them into cookie rounds
A great premise to work with! I donβt do coconut, the texture & I just donβt get along, but I could definitely do these cookies substituting finely chopped nuts.

Will pay fiber raise blood sugar?
Ever time I use allulose while cooking it tastes burnt. Does anyone else notice that?

Canβt have the oat fiber so I made them without! Froze well! They taste like an almond joy!!!! Yummmm!!!

Made these today. I absolutely love them. They are so rich and flavorful, I can stick with just one. Of course, I made them pretty big. LOL
Do you have a substitute for Oat Fiber? Kinda of expensive.
Do they have to stay in the fridge after they set up?
How much peanut butter? 1/2 cup?
