    My mom grew up in Houston, TX and says oil the same way you do. She also adds a r to wash. So it comes out warsh. In the DFW area you know it isn't Lancaster with a long a sound but you almost leave the second a out. Love watching you guys before I get ready to sleep.

    These look so yummy and pretty easy, I definitely will have to try! And us non southerners say boil like boy-ill. I’m from Utah and we have our own dialect as well..we don’t pronounce our t’s if it’s in the middle of a word. So mountain is meow-in, we also tend to mumble and just not pronounce our words clearly in general. 🤣

    One of our favorite chicken dinners is Chicken Piccata with Angel Hair Pasta. SO good that even my picky daughter eats it up. I like to serve it with roasted or grilled asparagus.

    Interesting about Steven's grandma serving in wide soup bowls because this is exactly how Indonesian food is served. In wide soup bowls similar to what you used in today's soup recipe, rice would go in the middle, then various meats and vegetables of contrasting flavors and textures go all around the rice. Then there are often fried shallot flakes (Bawang goreng) or peanuts with spiced toasted coconut (serundeng) sprinkled on top of all. The food is eaten with both a tablespoon and a fork to push the food onto the spoon. Look up Rijstaffel (Rice Table) images or videos online, and I think you'll be amazed by a whole new world of Indonesian foods.

    Mandy…love your recipes. I cook my taters in my instant pot for 5 minutes….hmmm. I cook this often…but i mix it all together and make a gravy by scratch to pour on top before oven…I put cheese in middle!

    Lemon chicken recipe from my mother-in-law is a family favorite. We call it "Oma Leonie's Citroen Kip". Chicken pieces with the skin on are a must. The skin become crunchy, tangy golden crisps. I prefer drumsticks, but any chicken will do. Rub chicken with salt or seasoned salt of your choice. Pour a generous amount of freshly squeezed lemon juice over the chicken and let it marinate while heating the CORN OIL in a large deep pot, enough to cover all the chicken pieces, maybe just below half full. This recipe works ONLY with corn oil. It's been tried, but no other oil works for this, yet the results are well worth it. Add chicken pieces carefully to the heated oil, one by one, being careful not to let it boil over. Pour in ALL the lemon juice. After the oil settles down with the addition of all the chicken and lemon juice, set the heat to keep it simmering while covered. Turn the chicken pieces occasionally, scraping the bottom so nothing sticks. You are basically boiling the chicken in oil 30 to 45 minutes depending on the size of the chicken pieces. They are done when golden brown and the meat is tender and fully cooked but not browned. Remove to a wire rack (not paper towels which will stick.) The chicken turns out tangy, sticky/crispy and savory. Great with jasmine rice and vegetable sides.

    My favorite way to cook chicken is with a seasoning mix that I created and bake it in the oven. The mix consists of equal parts of Trader Joe's Cuban Style Citrusy Garlic Seasoning Blend, McCormick’s pinch perfect rotisserie chicken seasoning, and Walmart brand Lemon and pepper seasoning. My fiancé and I love it. It’s almost the only way we eat chicken breast! We try other flavorings or marinades but that is our favorite.

    my favorite chicken is deconstructed chicken fajitas. I season frozen chicken breasts with salt, pepper and Tex Mex seasoning, lightly oily my 9 x 13 and bake them at 350 for 20 minutes. Meanwhile, I slice onions, red, yellow, orange and green peppers, toss them in olive oil, salt, pepper and that Tex Mex. When I pull the breasts out, I cover them with these vegetables, jack the oven up to 400 and bake another 20-30, depending on the chicken temp. I serve it either on its own or over rice. Leftovers the next day are mixed with the rice and put in a wrap. yum every time!

    I make a mushroom chicken that my family absolutely loves. Just came up with it when my husband and I were first married and I was cooking with what I had in the kitchen. Happy accidents are the best!!

    My favorite chicken dinner is anything my hubby cooks so I don’t have to 😁. (We’ve been married 39 years but it’s only been the last 5 years he’s had an interest in cooking and I love it). His latest delicacy is Chicken Piccata. It’s a pan fried chicken (coated in seasoned flour) in a sauce of fresh lemon juice, oil, butter, chicken broth and capers. It’s so good and pretty easy to make. (Sometimes he makes the lemon, butter, caper sauce over halibut or shrimp. Yum!). Can’t wait to try these chicken recipes in this video. They look so delicious!     When I make KFC chicken bowls I mash my taters and put corn and green beans in it. I fry or grill my chicken and cut it up and then make chicken gravy. I mix it all together. My granddaughter Maddy loves it!!!!

    So happy to see you all are feeling better. The queso fresco is really good with refried beans. I use it all time. You also wondered a good way to soften corn tortillas, if you put them in hot oil just long enough to soften they will not fall apart on you so easily. I love watching your videos, you make recipes so easy to follow and the ingredients are not so many. It always turns out great, love you all. My favorite way to eat chicken is a Garlic Dijon chicken!     I was working on my dinner menu for next week. I have so much chicken to use, so your video gave me great recipes to try. Having a hard time deciding which one to start with. I know my son will love the ramen and the street corn ones. So they have been added to my menu!
