    I have had the week from you know where at work (actually it's been a month). My favourite vegetarian recipe right now? Chill a martini glass in the freezer. Take a martini shaker. Add SEVERAL ounces of Vodka. Add lots of ice. Shake like mad. Take your chilled martini glass out of the freezer. Pour in the vodka (vermouth? what is that). Add olive juice and 6 olives. You're welcome.

    My favorite vegetarian meal is meatless chili. I just make sure to add three types of beans for a little variety and texture: Kidney, black, and then either a chili bean or a pinto bean, so that I don't really miss the meat.

    I love potato soup recipes that use butter and evaporated milk. It makes it so creamy and silky. Your recipe is similar to my mom's only my mom's calls for egg noodles as well. It makes the pot stretch really far, and adds additional heartiness to the servings. She thickens hers with some potato flakes, but I like to smash them like you did. Here's my mom's recipe. Mom's Potato Soup Recipe: Cube 3-4 potatoes, 1 carrot, 1-2 stalks of celery. and 1 diced onion Fill pot with water and veggies, add salt, bring to a boil, when potatoes are almost done, add egg noodles until tender. Add 1 can of evaporated milk, dry parsley for color, a little butter. Thicken the soup with a hand full of instant potato flakes.

    Mandy, hi from South Eastern Washington State. I am new to your channel and all I can say is WOW!!! Love, love, love your recipes and your meals on a budget. I am retiring from work in 5 days and these will really help me with meal planning. Only thing I will have to cut down the salt, but all the great veggie dishes will still have tons of flavor.     White beans in place of chicken. Lentils in place of ground meat. Quickie meals for me would be pinto bean sloppy joe, lentil taco, bbq beans on slider buns with slaw. Tofu or frozen shelled edamame for stir fry. Chick peas are firm and hold up well in a curry with coconut milk, veggies and garam masala. Chick peas are also good partially mashed up and add fixings to make a mock tuna salad.

    I made a pasta salad-
    Rotini pasta cooked ,drained,cooled
    Frozen green peas,thawed
    Red,green,orange ,yellow bell pepper or whichever you have
    Cucumber diced
    Sliced black olives – drained
    Shredded cheese
    Salt and pepper to taste
    Garlic powder,onion powder
    And pour a small bottle of zesty Italian dressing
    I didn’t give amounts as you decide what amount you need to feed your family.
    I do think drained tuna,rotisserie chicken,diced ham,etc would make this even better

    I had a neighbor teach me her tomato pie recipe- the only thing she did differently was put crumbled bacon in with her tomatoes- but of course no longer vegetarian but totally delicious!

    Mandy all these recipes are delicious ! I make and love the broccoli salad and I do add bacon and use apple cider vinegar in mine! I make my potato soup the same way you did and add bacon or sautéed smoked sausage coins and sour cream to mine ! And for the veggie soup I use a large can of V-8 juice instead of the tomato juice , I’ve had both ways and I enjoy the added flavor and more nutrients from the added veggie juice of other veggies used to make the V-8 and the V-8 adds more body to the soup because V-8 is thicker due to the fiber in the veggies in it ! And I like that these are all veggie dishes because meat is so expensive now days but also there are so many vegetarians that with these dishes they can enjoy them on a budget or if having company they can just make the one dish and offer the additions to their guest ! Thsnks for making these dishes and I hope you’ll start making a lot more vegetarian dishes , I’m sure many of your viewers would appreciate them because when cooking for a family on a budget it’s usually the meat that breaks that budget!!     We do a very similar black bean zucchini mix that we use for enchiladas, tacos, stuffed poblanos. It's a fav around here. 😂❤

    I had children that would not eat enough vegetables. I used V8 juice in the soup and only the vegetables they would eat. In my mind I was sneaking in more vegetables that way. Maybe not but I felt proactive lol.
