I make my chicken soup using Butler Soy Curls. You can get them from Amazon. They have the same consistency as chicken. They come dried and you add water to rehydrate them.

Those auto pressure cookers are fantastic. I have an Instant Pot and use it frequently. Cooks fast and efficient. Things you cook in them just seem to turn out perfect every time.
