My staple for budget meals is tvp or soy granules. Use it in chilli, bolognese, wraps… It's super cheap, versatile, packed with protein and you can make it flavourful with broth, soy sauce and spices 🙂
To the other question – I live in Finland, everything is expensive 😭

Im also curious if being in South Africa has had some sort of influence on your veganism? Do you it easier or more difficult to be vegan in ZA? Are there any foods you've had to give up or introduce more of?

I'm in Australia 🇦🇺 and veggies can be quite expensive. Like $5 for a bunch of non organic kale. $5 for a bunch of asparagus. $5 for half a cabbage etc my groceries are $250 a week

One of my fave budget vegan meals was and still is bean and mushroom pickle tacos, yep you heard it right. Any mashed or refried beans (usually black or pinto) smeared on corn tortillas with a few slices of mushroom sautéed in as much garlic as possible (I know mushrooms are not always budget but a little can go a long way) and a bit of sliced or diced dill pickle for a vinegary crunch. Fold and bake in oven until crispy, best served with a few or many dashes of hot sauce and if budget allows some cashew cream or avocado would be even more delish. I live in Southern California, beans and tortillas are very inexpensive and readily available here and I am fortunate to access avocados often from a friends/neighbors tree for free 😋

Frozen foods don’t lack fiber. They are blanched and will lose digestive enzymes but that is true for any cooked vegetables or fruit. Over time they can lose antioxidants and certain vitamins if frozen forever.
Also, just relax and try to not label everything. I guarantee when you are 40 you can look at these videos and realize you still don’t have everything figured out. Life always has more lessons to teach and you will always learn new things and realize things you thought were right at the time will make you wonder what you were thinking and you will see everything from a different angle.

Quick Disclaimer! Frozen vegetables contain about the SAME or even more nutrients and the same fibre as fresh! I don't know where Julia found this misinformation, but it's not true, eat all the frozen fruit and veggies you want… Ifyou really think about it with common sence, how would freezing remove fibre? Vitamins are temperature and light sensitive, but fibre not🤔🤓🌱

Omg i used to do the red lentil oatmeal a lot a few months back, its tasty if you serve it with good topings, i would suggest: coconut/soy yogurt, chia/flax seeds, berries, cinnamon

Beets are amazing! I have been getting really huge and deliciously sweet purple/red beets lately and… wow! Sidenote: They also make my pee/poo a vibrant pinkish color if I eat too many! Lol

with such a big platform, you should really consider fact checking before saying things about nutrition etc without qualifications. freezing vegetables does not strip fibre, this is a huge misconception

Hey dear! Wanted to suggest making pizza but instead of pizza dough to use lavash (wraps) as the base and then of course tomato sauce/cream sauce and all of the veggies on top. I put one wrap – sauce, stack another one on top with sauce so it's not as thin and doesn't break apart.
My personal fav toppings are mushrooms, hot pepper, onions, corn, some vegan cheese and some pickles. Kisses from Bulgaria

Hey Julia! Where did you learn that frozen veggies lack fiber? I have good news – that’s not true! In fact, frozen vegetables can retain more nutrients and fiber than fresh, as they’re preserved immediately after harvest and don’t start breaking down in transit and sitting on store shelves. Either way, eating vegetables is a good thing, fresh or frozen, and you don’t need to worry about nutrient loss in frozen vegetables. That said, if you don’t like frozen broccoli, don’t eat it! 😋

I tend to overspent on my groceries so I am grateful for these recipies. I am newly getting into using a lot more vegetables in one dish and am finding that they are way more affordable than I thought (sounds silly but that's were I am). Things like asparagus and berrys tend to be expensive. Greetings from Germany
