    Interesting recipes but none of these are low carb at all. Sugar is entirely carbs. You can't add tablespoons of sugar to a recipe and call it low carb. Mirin has lots of sugar in it as well, which makes it not low carb either. Even your salad dressing has lots of carbs because of how much sugar you add to it. The vegetables you chose at the end, except for the zucchini, are also pretty high in carbs too. Sweet potatoes are very high in carbs. Potatoes are one of the most carby things you can eat. The potatoes in this bento box alone would probably count towards more than half a person's allotted daily carb count if they're on a low carb diet.

    You should really calculate the macronutrients in your recipes because your "low carb" recipes are still very high in carbs.

    I love the idea of bento boxes. I'm someone who likes variety in their food, and it seems bento would be a great way to do that. You can use a base like rice, noodles or vegetables, and then make a few different kinds of things to keep in the fridge and use, without a lot of effort. Add in a sauce for noodles etc and there's lots of variety, and nutrition!
