I have watched several of you cheese cake videos. I am looking at cheese cake or spring form pans. Do you have a preference of the single pan or a stacked pan. Is the single pan allow for a deeper cake? If I purchase a single pot, can I add a second pan later and use a stacking rack to accommodate 2 pans?
Thank you in advance for your response.
I enjoy watching your YouTube. You make everything look easy.

If you wanted to make the chocolate version could you omit the peppermint? and if you are not a cranberry would a jam or preserves work? Sorry husband isn't a peppermint or cranberry fan.

I’m curious why you add youngest to your cheesecakes. Is it for tang, or is there a chemical (enzyme) action taking place? I can’t eat many cultured dairy products so I was wondering if I could leave it out. Your videos inspire me often, and this video is no exception.

All three look wonderful! What do you recommend if you want the texture kind of in the middle between the soft and the firm? I agree with you that the Special Dark cocoa is the best. Happy Holidays to you and the family.
