    May I add a comment about cinnamon? I absolutely love cinnamon and add a lot to my morning oatmeal (or amaranth, or other breakfast cereal). Regular Cassia cinnamon can be bad for the liver for some people in higher amounts but that higher amount is only about a tsp. a day. I switched to ceylon cinnamon. It has much less coumarin, which is the ingredient that can be toxic at high levels.

    I had chickpeas in the fridge so I tried your first recipe. I used a tsp of red curry paste instead of the other spices and frozen spinach. It was really nice and colourful. I love the dish with olives as well. Thank you for inspiring us!
