Put the store bought frosting in microwave for 10 seconds, stir,another, 10,, stir if its softer your good, if not 10 more seconds.. it will easily pour from from container.. put in freezer, or fridge to reharden..your adding eclair recipe into fridge or freezer anyways…
Viola.. easy to spread frosting without messing up your top of dessert

Just a suggestion, but why not put a very thin layer of the pudding under the first layer. Just enough to help stabilize them.

For the eclair, you can also use chocolate pudding instead of frosting. It's super-refreshing in the summer when everything is ice-cold. I do that with my poke cake.

Ya know, I host a crafters/quilting group twice a month at our town hall and you just give this old gal some great new recipes to make to take. We usually bring snacks and most of them bring dessert type things, I'm the salty one. But this time I will foot them and bring on the sweets! I love each one of these. for the eclair I'd add instant coffee to the vanilla pudding turning it into tiramisu mmmmm

Quick tip. Dip the back of the spoon in water to help the spoon not stick when spreading the mix.
Can any UK viewers tell me what is our equivalent to graham crackers?
Microwave the can of frosting about 15-30 seconds before putting it on the eclair cake. Makes it easier to spread and changes the consistency slightly for more of a ganache.

I make the peanut butter bars all the time. Once it sets overnight I feel like it almost has a fudgey texture.

If you spray the back of your spoon with a little nonstick spray you can smooth it down a lot easier.

The original topping for an eclair cake was ganache never frosting.
This isn't actually how to make eclair cake. Someone came up with this new way of doing it but I was making it in high school and it was much better then made my way or our way.

I worked with a girl that would make those cheesecakes. So good. She would also do strawberry ones and use vanilla oreos and they were so delicious!
This works for me cuz I just lick off the Oreo cream filling, since it isn't needed for the recipe.

My mother made the eclair 60 yrs ago, sometimes adding sliced bananas in between one of the layers.
Soooooo good. And sometimes white icing.
