    Save me, I have been down the rabbit hole all day looking for single person meals. I love your videos but I am an empty nester, it’s just me and I can’t eat that many meals that are the same in a row. I do love to cook but I’m used to cooking for a family of 5. Kids moved out and husband left all at the same time. I haven’t found other channels that entertain me like yours, so maybe you could try a video out 😀

    You can even make the sausage/veggie sheet pan meal at a discount. I recently found Eckrich (brand name) sausage at Dollar Tree for $1.25. I bought two packages to make it stretch, but one would likely be enough for a smaller family. You can also get frozen vegetables. We got sliced bell pepper and onions. I did saute it all and didn't use the sheet pan but super easy and added it to pasta and it was delicious.

    I have a couple questions for you, though. Please bare with me but no one taught me to cook so I don't know that much.
    1. When making broth with pieces of veggies and onion skins … Do the onion skins desolve?
    2. When you boil pasta, you sometimes use the pasta water in the recipe instead of throwing it away. Why? Is there a reason like added taste or nutrients or something? I've always just thrown my water away. I've never used the pasta water as part of a recipe. But I do see you sometimes do it and at least one other YouTuber does the same thing and I'm just curious as to why?

    I love all of these ideas and I love using my griddle for making sandwiches I can make 6 at a time on the griddle it's a quick dinner with soup or baked French fries to go with it. Love these videos Mindy.

    Your snack dinner is a long time favourite in my family, except we call it "picky tea". In my part of the UK we call our mid-day meal "dinner" and our evening meal is "tea". Confusing, I know! 🙂 Thanks for the great ideas Mindy!
