    Madam, the batter already fermented for 8 hours then what's the need for adding the chemical ENO. It's a bicarb. Isn't it?. You are health conscious cook. I am a regular follower of your cooking. I don't know how come you are doing this. If it is a instant batter then there is a chance. I am against the health spoiling dish for the sake of texture and taste. This is my humble suggestion.

    Fantastic combo Gitaji!
    Both of them looks so soft in texture.

    After adding the Eno salt, u had steamed only one plate at a time.
    Wont the effervesence subside if the batter is kept for a longer time Gitaji??

    Nice ,tempting ,easy to make recipes. But a few queries :-1) If rice idli is not available, can any other rice be taken ? (2) Is it necessary to use dal with it's skin,if they are to be removed while washing and why? (3) Can dal without skin be used or will it make any difference in taste? Lastly, what should be the proportion of Roasted Gram Dal and Coconut ?If roasted gram Dal is not available can Bhuna chana be used or roasted gram dal IS A MUST ? Please respond.
