I’m definitely going to make your Man Cakes but, for my (adult) Sons. I make brunches for almost every occasion. It’s so much easier and less expensive, especially if you have a large family. They look so tasty! 😋

You have been perplexed about that white substance attached to the egg yolk. That structure is called a chalaza and is a ligament of sorts to keep the yolk from banging into the inside of the shell. It is not egg white. So now you know.

    VIEWER WARNING:
I was making a Dutch Baby after a rough night out, and put J&J Baby Powder on my Dutch Baby.
I did join the class-action lawsuit and hope to have a settlement soon.
Please stick to Chef John's recommendation for best results.

Did you combine these all at a 1.25x or 1.5x speed? It sounds a little quicker than your regular tempo, which I don't mind, since it would fit better into the time length of video you are aiming for. Well done!

My favorite thing about this video compilation is hearing how Chef John's style has changed over the years. I was legitimately confused when CJ said 'round the outside' only once during the first video.

Those mancakes are somewhat disgusting. No idea who is obsessed enough to eat ham and green onions with maple sirup. No need to make everything unhealthy. Will give the other recipes a try though I am skipping that one.

Re: Dutch Baby recipe… 'Use Meyer lemons if you can find them…' Are we supposed to pretend that 99.9999% of all lemons commercially available at retail in the USA are anything except Meyer lemons? What you should have said is – 'If you can EVER find any kind of lemon other than Meyer, use them, just to expose yourself to something other than US grocery monopoly commodities…'

So no real Dutch pancakes nor Frenche crepes? Or don't they make these in the States? Personally I din't like the American ones because the inside always seems to be sticky to the teeth.

I'm loving this series on pancakes. I've added a splash of lemon extract to my pancake batter for years. There's something about the combination of lemon and maple syrup that really is awesome. I can't wait to try this using ricotta

Exactly at the time chef John was talking about "players" and the Dutch babies, I was thinking about how I can incorporate my stewed apples that I use for spiced apple cake in this recipe. 😉

If you ever want to learn out to make actual world-class blueberry pancakes, hit me up. Your method is 100% wrong. As in there isn't a single thing in your recipe that is even close to correct.
