    I harvested 61 pounds of potatoes today and we had the ones we accidentally stabbed with the pitch fork for dinner ๐Ÿ˜ My sister and I mashed them with their skins on and had fresh green beans too. I was in my potato eating glory. Thanks for the great ideas as usual. Loved it! โค๏ธ

    That mushroom gravy looks delicious! My favorite kind of potatoes are Japanese sweet potatoes. I haven't been able to get them in months — even Whole Foods doesn't have them — but I should be able to get them at the farmer's market in October and November. I get so excited for the food this time of year!

    Sharing another of my favorites… For a creamy potato soup I blend half my potatoes (and cauliflower to dilute calories and get in some healthy cruciferous) then add the other half of my potatoes in cubed form. Onions, carrots, and/or broccoli make nice veggie additions. Toss in peas or white beans for a protein boost (when not on Mary's mini). If adding cauliflower be sure to keep the cauliflower no more than the same amount of potatoes by volume.

    I could live on potatoes. I go through phases of loving sweet potatoes more than regular potatoes just depends what I have on hand….made a sweet potato Hummus the other day. So good! I actually added a big scoop to a couple of bowls of veg soup that I had during the week (still got a ton of soup in the freezer…rememberthat big batch I made ages ago haha), anyway the sweet potato Hummus made the soup nice and creamy ๐Ÿฅฐ

    I love soup too! SO looking forward to cooler days. Try adding pureed great northern beans for creaminess in soups. I like the taste better than navy beans and feel they break down better for sauces and soup bases.

    One of my grandsons is powered by potatoes! He could eat them every meal. You can do a lot with that mushroom gravy! It could be used as a base for a lot of different things! Thanks for the great ideas!๐Ÿ˜

    I totally tried the mushroom gravy a couple days ago . I found it on one of your past videos. And lemme tell you. I LOVE. pour it on your noodles. Pour it on your potatoes. Pour it on your rice or even make a black bean burger and do smothered black bean burgers with Caramelized onions. Aahhh. Iโ€™ll be batch cooking the gravy to have ready to go in the freezer.
