I have to sat, I agree with everything you said, but think you left out one important thing. When you are starting out it is so important to have a group of friends to ask over and try the food once or twice as you perfect your skills as a cook. That’s where friendship and love for each other comes, when you share a home cooked meal together and grow together.
Misen is made in China, unfortunately.

Quality of ingredients is HUGE. I know I spend more money on groceries than most people but the quality of ingredients is far superior than the cheap stuff. It's more fun and motivating to cook if you have the good stuff.

I found this out over time… don't assume that your parents (or most people) know how to cook things properly. Just because you always liked your parents cooking doesn't mean their dishes can't be improved by changing the technique. I've learned that my mom is horrible with making substitutions, and cook times, and cook temps, and never tastes her food as she goes. Almost all of her food is great but watching her cook is alarming.
What's the oaxacan cookbook you've been reading?

Great video. I love the part about having a zero waste mentality. I struggled with that until I found a website called SuperCook. It works like an app. All you have to do is put in all the things you have in your fridge/ freezer and it will give all the possible recipes you could make with the items you have on hand. I found this program through the culinary online school Escoffier. I love it. No more waste.
