I would look into Gordon Ramsey's way of cutting, your way isn't the best because it exposes your fingertips open to cutting. Folding your fingers on the thing your cutting and using your knuckles to guide how thick your cut is, and to save your fingers.
This video was awesome, searing meat is very very important.
I'm gonna be that guy though. Its "Would have," not "Would of." It's an extremely common mistake, and I'm definitely being THAT GUY by pointing it out, but I appreciated when someone else corrected my use of the phrase, so I thought I'd pay it forward, even if I come off as a nitpicky jerk.
